Kitchen Corner

Parippu Pradhaman 

(For approximately 300 servings; One serving is 1 cup)

Chana Daal 5 kg
Ghee 250g
Sarkara 10 kg
Chukku podi 100 g
Jeerakapodi 50 g
kotta thenga(dry coconut) - I No, cut into small pieces
Pacha thenga(freshcoconut) 20 nos or about15 litres of coconut milk.
Cardomom powder 50g
Plantains 10

Cook chana daal in pressure cooker until it becomes real soft. Smash chana daal and make it a
paste.Add one litre of water to sarkara and boil it. Filter sarkara water from impurities. Mix chana
daal paste, sarkara and ghee and cook for approximately minimum of one hour. Make sure sarkara
does not stick to the bottom of the vessel. Once the mixture is ready, start adding coconut milk
and boil it.In the end add thala paal (thick paste of coconult milk). Stop boiling immediately after that. Then add items number 4,5,8,9 and 6 in the order.

Pradhaman ready!

HOT AND SOUR SPICY CHILLY PRAWNS

Ingredients

Prawns ¾ lbs

Ginger garlic paste 1 tbsp

Sliced Onions 1/2 cup

Black pepper powder 2 tbsp (add more if you like it spicy)

Chilly sauce 2 tbsp

Soya sauce 1 tbsp

Tomato sauce 1/2 tbsp

Corn flour 2 tbsp

All purpose flour 1 tbsp

Egg 1

Salt

Oil

 

For garnish

Spring onion

Corriander  leaves

 

Preparation Method

1.       Clean and devein the prawns. Marinate the prawns with salt and pepper powder. Refrigerate for about half an hour.

2.        In another bowl combine the beaten egg, all purpose flour and corn flour and add it to the marinated prawns.

3.       Heat oil in the pan and fry the prawns. Remove the prawns and keep aside.

4.       In the remaining oil sauté the sliced onions with ginger garlic paste and bit of salt.

5.       When the onion becomes pink and tender add soya sauce, half of chilly sauce and sauté for 2  mnts.

6.       Add little water and let it boil. When it starts to boil add the fried prawns.

7.       Add tomato sauce and a little pepper powder. Mix well and sauté.

8.       To the gravy add the diluted corn flour. Allow it to boil.

9.       When it starts to boil remove from flame. For garnish sprinkle chopped spring onion and coriander leaves. Ho t and sour prawns is ready to be served.

HOME REMEDY FOR COLD

Here is a home remedy for cold you can make at home right now!

Blend

1whole lemon

1 cup Apple juice

Ginger 1” (with skin, washed)

Honey 1tbsp

Cayenne- 1 pinch

 

Blend all the ingredients and pour it in a strainer and strain it. You can also warm it for few seconds in the microwave. You can have it warm or cold.

Try it and you will feel much better!!
